This is the first week my housemate and I are having different menus for the week and this gave me the opportunity to try something I’ve wanted to try for a while, Liver!
Liver is one of nature’s superfoods, its high in protein and also a rich source of multitude of vitamins and minerals. I’ve never had a problem with blood and always loved eating any type of offal so it was never a “don’t-go-there” food for me. What I used slightly differed to that recipe in that I used lamb liver instead of beef as my butcher ran out, I also used Paprika, Chilli Powder, Thyme, Tarragon and Sage at the end to give it a bit more fragrance.
Basic ingredients I used as shown, check out the bloooood:
500g of Lamb Liver, sliced
1 tbsp of butter
1 small red onion
3 cloves of garlic, chopped finely
10 button mushrooms, sliced
3 rashers of bacon, chopped into bite sized pieces
1/2 tsp of chilli powder
1/2 tsp of paprika
herbs herbs and herbs!
Firstly fry up the bacon for a couple of minutes with the butter, and then add the onion and garlic
Once the bacon is starting to look like its cooked, I added the mushrooms, sauteed for another couple of minutes and added the liver.
season with paprika and chilli powder.
Cook for another 10 minutes or until the liver is cook through, add the herbs of your choice towards the last 5 minutes to give it a bit more dimension and freshness.
Once it’s done’, plate it up and I also cut up some organic grass fed fetta on top and a side of baby spinach 🙂
Trust me, this is tasty. I gave some to my blood squeamish housemate, and even he didn’t mind it. So there you have it, Bacon and Liver recipe, with the stamp of approval from a Liver-hater.
